How to use whisky in baking

World Baking Day falls on 17th May each year, and since it’s also Whisky Month, we couldn’t resist taking a look back through our posts for some cracking recipes and tips on how to bake using Scotch whisky!

Butterscotch pudding with Drambuie cream

An Amber Restaurant take on the classic Sticky Toffee Pudding (which if you’re lucky, you’ll sometimes find on our famous Taste of Scotland menu), complete with a light Drambuie cream.

Whisky Chocolate Cheesecake

A recent addition to the Scotch Whisky Experience, this recipe was sent to us by Heather – one of our followers on social media (thank you Heather!) In her recipe Heather suggests using Auchentoshan as the base whisky, but our team have found it works with any good single malt that has overtones of vanilla: the flavour you’ll often find in a bourbon or virgin oak matured Scotch.

Whisky themed ginger biscuits

Though this recipe doesn’t strictly include whisky, we couldn’t resist including it. These whisky-themed cookies were baked for us by housekeeping team member Michalina, and have been shaped into lots of the things you’ll find on a whisky tour at a distillery! We’ve even included some whisky matches that go with these delicious, lightly-spiced biscuits.

Highland Coo Cupcakes

Last year we published team member Cara’s recipe for whisky-flavour cupcakes shaped into Highland Coos, and they went down a storm! Cara uses Tomatin whisky in these delicious wee bakes, but any smooth whisky with those classic bourbon flavours of coconut and vanilla will be ideal.

Whisky Ginger Cake

Whisky and ginger are such a tasty combination that we had to feature it twice! This recipe, from Senior Visitor Assistant Jacqui, uses Scotch whisky in the icing for this delectably moreish loaf cake, which features diced stem ginger, plenty of treacle and minimal effort. Try it: you won’t be disappointed.

Whisky Pumpkin Pie

We experimented with incorporating Scotch whisky into that classic American celebratory staple – the pumpkin pie – and it turned out brilliantly! Find a spicy, rich whisky that will match the autumnal spiciness of the pie, and serve it with cream or vanilla ice cream. Oh, and because it’s us, you’ll also find some rather splendid whisky matches in there too, if you’re going for a particularly decadent dessert.
